Tafel Mystère Belgian Single

In May of 2023, I finished off my Melting Stream String Saison faster than I thought I would.
Knowing that I would have family coming in soon to celebrate my son's graduation from High School, I thought I'd better create a quick table/session beer for me to drink.
I had some unlabeled harvested yeast in the fridge. I was fairly sure it was Belgian Ale Yeast harvested from Dubble Minor and/or Doodle Bop, but I wasn't 100% sure.
Regardless, I figured I would use in this "Mystery" Table beer.
Short boil to get a quick brew day done. Quick fermenation.
Nice little table beer.
I've entered "Belgium Single" as the style, although since I'm not 100% sure that the yeast is Belgian and since I'm using Centennial hops, it might be more of an American Blonde.
Honestly, though, who care what style I call it as long as I like drinking it.

If steeping, remove grains, and prepare to boil wort
Recipe Notes
*NOTE: We think the yeast is WY1214, but it might be something else.
Make small yeast starter a day or two before brew day.
Water salts bring Denver water profile (as defined by BeerSmith) to
Ca=101,Mg=8,Na=21,SO4=127,Cl=90,HCO3=104
Acid to bring water pH to around 5.3
Mash as directed. (Overnight mash)
Boil as directed.
Cool wort to as close to 75F as possible.
Ferment at ambient temp.
Keg after one to two weeks in fermentor. Force carbonate to taste.

Brewing Notes
10/21/2025 I am running low on beer with Learn to Homebrew day coming up. I think this is a quick brew I can do to bring my inventory up. I have a couple of expired packs of SafAleT58 that I'll try to make a starter out of.
10/23/2025 Making a starter with 1.5 cups DME in 1200 ml water for the SafAleT58 packs. I should be picking up ingredients at lunch time today. Might try to get a work-day brew day in tomorrow. We'll see how that goes.
10/24/2025 "Short and Shoddy" brew day today started at 5:35am and I had the fermenter in the basement by 7:40am. OG a little high at 1.048. Close enough for me. Don't have the tilt in there. Planning on kegging next week, probably Thursday.
10/25/2025 Fermentation took off really fast yesterday and was pretty intense for quite awhile. Really showed down by this morning. Temp strip seemed to be right at 75, but who knows how accurate that was.
10/29/2025 Kegged. 1.008 FG. Samples taste right as designed. A bit hazy, but that's ok for this beer I think. Chilling on right side of kegerator.
10/30/2025 Connected the gas this morning after chilling overnight. Set at 20psi. Did the OG / FG calculations. ABV 5.3. ADF 83.
10/31/2025 Chilling nicely. Noticed that the gauge says 30psi ... not 20 like I entered yesterday. Carbonation isn't nearly where I want it, so I'll leave it here for a day or two more. Also very hazy.
11/1/2025 Drank (probably too much) on Learn to Homebrew Day while brewing my X-Mas English Barleywine. Such a good beer. Not sure this is likely to last long.
