Said Strumpet Czech Pale Lager

**Czech Pale Lager Recipe with Saflager S-23:**
**Ingredients:**
- 8.5 lbs Pilsner Malt
- 0.5 lb Munich Malt
- 0.5 lb Carafoam Malt
- 0.5 oz Magnum Hops (60 minutes)
- 0.5 oz Saaz Hops (10 minutes)
- 0.5 oz Tettnang Hops (10 minutes)
- 0.5 oz Saaz Hops (5 minutes)
- 0.5 oz Tettnang Hops (5 minutes)
- 1 Whirlfloc Tablet (15 minutes)
- 0.5 packet Gelatin (added during secondary fermentation)
- Saflager S-23 Dry Lager Yeast
**Instructions:**
1. Mash grains at 150°F (65.6°C) for 60 minutes.
2. Sparge and bring the wort to a boil.
3. Add Magnum hops at the beginning of the boil (60 minutes).
4. Add Saaz and Tettnang hops at 10 and 5 minutes.
5. Add Whirlfloc tablet at 15 minutes.
6. Cool the wort and transfer to a fermenter.
7. Aerate the wort and rehydrate and pitch half a packet of Saflager S-23 according to the manufacturer's instructions.
8. After primary fermentation, transfer to secondary and add half a packet of gelatin according to the manufacturer's instructions for clarification.
9. Continue with lagering at near-freezing temperatures for 4-6 weeks.
10. Carbonate to around 2.5 volumes of CO2.

If steeping, remove grains,
and prepare to boil wort
No water salt additions to Denver water profile (as defined by BeerSmith)
Ca=31,Mg=8,Na=21,SO4=51,Cl=23,HCO3=104
Acid addition to get mash to around 5.3 pH.
Mash grains as directed in recipe.
Bring the wort to a boil.
Add hops and other boil additions as directed by recipe.
Cool the wort to as close to 50 degrees as possible and transfer to a fermenter.
Aerate the wort and rehydrate and pitch yeast.
Keep fermentation in 50's for first 5 days. Let raise to ambient temperature for the remaining of fermentation (2 weeks total)
After primary fermentation, keg and chill for a day or two. Then add gelatin
Carbonate to around 2.5 volumes of CO2 and enjoy the delicious beer.

1/18/2024 Bought ingredients at Tom's Brew Shop. Used Proximity Pilsen - Colorado Pilsner Malt, Proximity Dextrin Malt, and Proximity Munich 10 Malt. Hoping to brew this weekend.
1/22/2024 Brew day yesterday went well. Overnight mash. 1.040 OG ... right on plan. Chilled to under 50 with just the flowing water. Spilled most of the S-23 so I also put in a pack of W-34/70. Not seeing fermentation signs yet today.
1/23/2024 Fermentation started going strong sometime yesterday afternoon. I raised the temperature controller from 50 to 52 overnight. I plan to raise another degree each day until Friday and then let it go where ambient temperature takes it.
1/24/2024 Forgot to switch out ice bottles last night, and the temperature was up to 59 this morning. Set the controller to 58. Fermentation continues to be strong.
1/26/2024 Bubbling has slowed down considerably. Decided to unplug the cooling pump this morning.
1/30/2024 Pretty much no bubbling now. Temperature reading 62 degrees. Will probably keg this weekend.
2/3/2024 Kegged. FG a little lower than planned at 1.007. Looked nice and clear going into keg. Really nice hop flavor. I think we're going to really love this beer. Harvested yeast. Don't have tap space open yet but should have some soon.
2/5/2024 Kicked Golly Jeepers on Saturday. Cleaned the draft line and the tap of the right side of the kegerator yesterday. Put this keg in that spot. I expect I'll add gelatin today sometime and hook up the gas.
2/7/2024 Wonderful beer. Still needs carbonation and clarity, but it tastes fantastic.😋
2/9/2024 Slow-pour style now. Gorgeous thick white head with beautiful lace. Nice yummy beer. Wonderful hoppy flavor with a wonderful light crisp malt base. Fairly low alcohol means I can drink tons. Going to be a favorite here for as long as it lasts. Since this is one both the Beer Model and I will enjoy, it probably won't last long.

2/22/2024 My son stopped by last night with a few friends. His friends sampled the beers I have on tap, and said they liked them. This was one of those beers.
3/7/2024 Great clarity. Nice thick white head. Wonderful lace. Crisp clean malt flavor with just enough noble hop flavor to know it is there. Wonderful beer.
3/15/2024 Crystal clear. Can read through this beer now. Wonderful light crackery malt flavor. Can taste the saaz and Tettnang hops in the finish. Wonderful clean delicate beer.

4/15/2024 Still a wonderful beer. Awesome flavor. Great clarity. Gorgeous. I am pretty sure this will be the next keg to kick. Has lasted over 2.5 months, which is pretty surprising considering both the wife and myself love this beer.
