      <description>Dry hop #1 today.  1oz each of Azacca, Citra, and Mosaic. I threw them in "naked". Tilt was at 1.037 and 61 degrees. I'll be dry-hopping in the keg also, but that is still a couple weeks away.</description>

      <description>Brew day today went well. Sort of a late start, though. Mash through church. Didn't have yeast pitched until 12:15 or so. Pre-boil gravity a bit low, so I added some table sugar to bring up the gravity. LOTS of hops. Used pond pump to get to just under 60. Hoping to see bubbling a little quicker since the temperature is a bit higher than my typical lager start. OG right on target 1.056</description>

Classic Saaz hop character in the finish. Just a touch of the noble spice. Absolutely crystal clear with a gorgeous pale yellow color. Great beer.</description>

      <description>Well ... I had a couple of pints from the keg to bring the level down. Noticed that this tastes a little salty, which made me check the nutrition facts of the potato flakes. Sure enough, 340mg sodium per serving. Crap! Not undrinkable, but I'm sure this would be better without the extra salt. Of well ... live and learn I suppose.</description>

      <description>Boil went fine, but I left the heat on during chilling. Eventually I figured it out, but the wort was down around 80, so I decided to rack to fermenter and let the cooling system take it down the rest of the way. At the moment, the temperature says 71, so I still have a ways to go before pitching. OG was pretty high at 1.064. We'll go with it, though. Clean up with the potato gunk was a bit more tedious. Not sure I'll ever use flaked potatoes as an adjunct ever again.</description>

Went for a bike ride while the kettle was heating to just below boiling, but the Foundry tripped a GFI, so I had to wait a little longer after I got back. Pre-boil gravity was a little high. Diluted. Everything else went fine. Pitched at around 1pm to 63 degree wort. 1.046 OG.</description>

Will probably unplug today (I know I wrote the same thing yesterday). I decided to add the dry hops right to the top of fermenter. Relying on hop creep to scrub oxygen. There is a little yeast on the top still. Might keg as early as this weekend.</description>

      <description>Kegged with Campden tablet. Final Tilt said 1.013, which was actually close to the 1.012 hydrometer reading. Sample tastes great. Not sure it has the same intensity as I remember from cluster hops, but the combination of Cascade / Saaz seem to be a pretty good approximation. Chilling in the kegerator now. I'm running low on other beers, so this will probably be consumed fairly quickly. Need to get more brew days in.</description>

Raining so I decided to rack to fermenter
13:00 down in the basement. Tilt says 1.046 at 59 degrees. Decided to pitch yeast now. /
Didn't take a sample for OG, but I'm going to call it based on preboil, 1.050</description>

      <description>Compared to Samurai... Both crystal clear. Very close in color. Might be my imagination but Tengu seems a bit lighter in color. 
Tengu with significantly better head and head retention. 
The Samurai Aroma has a touch more sulfur where the Tengu has herbal hops in the aroma. 
Both are crisp and clean. Light bodies. The Tengu is obviously hoppy whereas the Samurai isn't. Get a little more lemon/lime hop flavor than in the aroma 
I feel like both have a subtle "Jasmine" rice flavor coming through. 
Prefer the Tengu ... But both are solid beers</description>

      <description>Finished the brew day as I was making dinner. Next time I do a rice lager (if I do), I'm going to cook the rice in a separate pot, probably on the stove. It was just too long of a brew day with the rice cooking and then cooling. But, everything went great and I ended up with a 1.050 OG. This morning there are no real signs of fermentation, but I'm sure they will be there later today. Tilt says 1.049 at 51 degrees. Mostly around 55 degrees until I stirred up the wort this morning. Anyway, I'll ferment cold a couple days and then let it rise to ambient for the rest of the fermentation.</description>

      <description>Compared to la Chouffe Blond. Yoker lighter in color and much more clear. Also drier and IMO more "drinkable". More pear esters in Yoker. La Chouffe has a touch more bubble gum and a little more bitter. Definitely more body. I think there is a little more hop flavor in la Chouffe too. 
Chouffe has more carbonation, but not as much more as I thought it would. Originally, Chouffe had a creamier more full head, but lacing and head retention on Yoker caught up. 
Truthfully, I prefer Yoker. I'd really like to try La Chouffe fresher in Belgium. </description>

      <description>Got finished right around noon. Everything got added at correct times. Pitched yeast at around 58 degrees. Once it starts bubbling, I'll set it at 60. OG right at plan 1.052. Pre-boil was a little low, so I boiled 15 or 20 minutes before actually starting boil timer. About half (maybe a little more than half) dry hops in bags attached with magnet. Not sure if they are actually hanging into the wort. Oh well.</description>

      <description>Kegged. Meant to do it yesterday, but our garbage disposal crapped out and was leaking, so I waited until I could get that replaced. The beer was more clear than I remember any beer out of the fermenter in quite awhile. The sample was nice. Maybe a little more bitter than I intended, which is good for me, but since this was meant as a non-craft-beer-fan beer, it might not be what we want. Anyway, it is chilling now. I'll really have to hit the PSI high to be ready for Christmas. Tilt said 1.005 at 66. The official hydrometer FG is 1.010, which is very close to plan. ABV 4.6. ADF 77. Looking forward to drinking.</description>

I will probably try to finish this up to make room for the X-Mas Ale. Still the same beautiful black beer with a thick tan head. Nice roasty flavor with a slightly fruity but dry-ish finish. </description>

      <description>So ... I've been fermenting this in the Chubby, but I had a gas disconnect attached to allow all the pressure to discharge. Late morning today, I felt the fomenter and it was rock-hard. I put in the spunding valve to slowly let out pressure. It measured around 20 psi. Of course letting out the pressure is causing the beer to cloud up. I'll try to reduce this to 0 psi over the next couple of days.</description>

      <description>Brew day went well, although I drank too much. I thought I had crappy efficiency until I remembered that I had held back the sugar to add when I got home and pitched the yeast. Holly cow this fermentation took off fast, I pitched when we got home ... around 6pm and the fermentation was rocking before 9pm. It wasn't until this morning that I dissolved 1.6 lbs of sugar in half a gallon of water, putting this at exactly the planned 1.077 (at least if I did the calculations right). </description>

      <description>Bubbling has really slowed down and the krausen is pretty much gone. Still fairly cloudy and it does look like there is movement in there. Tilt says 1.014 at 68. Over the weekend, temp got as high as 71 for a bit, but for the most part the temperature has been nicely controlled. The brew calendar says I'm kegging on 11/16, and that still seems reasonable at this point.</description>

I hydrated the yeast yesterday and it looked a little weird to me, so I'm not 100% sure the original pack was good. I'll give this a couple of hours and see if I get the typical signs.       <description>Compared with Rainier. Clarity very close. Rainier just a touch more brilliant. 

Very close in color, although Johnny might be a touch darker. Much closer than I thought it would be. 

Rainier no head retention at all. Johnny very good for a Merican Light Lager. Very similar foam color. 

Both crisp and clean. Johnny has more hop flavor. A bit spicy. It might be my imagination, but Johnny has body. I feel like other than the extra body the malt bills are pretty close. </description>

      <description>Kegged with a campden tablet. 1.012 FG exactly as planned. Harvested the yeast. Tastes basically as I remember this beer did before. I wonder if I'd notice the hops difference if I had this and last batch side-by-side. Chilling on right side of beer fridge. Will probably add gelatin in a couple days. </description>
