Imaginary Dragon Brown Ale

Back in my Mr. Beer and Extract years, I developed a brown ale with an unfortunate name.

I never developed an all-grain recipe for it, but I always thought I should. Now I've gotten around to making the all-grain version. And, I'm changing the name.

The original, unfortunate name had dragon in the name. I wanted to keep that. I've also become quite a fan of Imagine Dragons. I hope they don't mind my choice of names.


The beer is an American Brown Ale with a touch of cinnamon. Cinnamon may seem like a strange choice, but trust me, it works with this beer. And makes it very unique.

Batch sparge with 2 steps (Drain mash tun , 5.26gal) of 168.0 F water

Recipe Notes
Add 6g of CaCO3 into the strike water to bring up Calcium and help with clarity.
From Denver Water, this puts the water profile at:
Brew as directed from recipe.
Cool wort to as close to 60 degrees as possible.
Add in Cinnamon Sticks into primary and rack on top.
Ferment at 60 for a day and let rise to mid 60's for the rest of the week. Then let the temperature go where it wants.
Keg carbonate.

Brew day went well. Started later than usual and let mash go through church. It was pretty windy and the flame kept going out, but I kept a close eye on it og on target at 1.058.

Kraussen down. 1.015 gravity makes this 5.7% abv beer. Good clarity. Great chocolate caramel flavor. Only a bit of what might be cinnamon. Perfect.

Kegged today. 1.013 puts the FG right on target. Beer is 5.9% ABV. I love the flavor. Just enough cinnamon to know it is there, but not enough to know exactly what it is without knowing. Success!

Rocked CO2 into the keg for 2.5 songs. Will try beer tonight or tomorrow.

Had a little sample. Nice level of carbonation for this style of beer. Maybe a bit sweet. Delicious, though. Gave it a shot of CO2 to help with flow as I will be drinking this around grilling time tonight.
