meltingstream.jpgMelting Stream is the Spring version of my Seasonal Saison series of beers. 

It was between my Summer brew and my Autumn brew that I realized I was doing a Seasonal Series. Alas, I had skipped Spring. 

Early in 2015, I started my second Seasonal Saison cycle with a second batch of Arctic Vortex, and this time I was ready for a Spring Saison when Winter was over.

Like all my saisons, I wanted it to finish dry and derive any of its spiciness from the 3711 ("The Real Super Yeast") and noble hops. No spices added, just beer ingredients. I decided to go a little lighter than a traditional saison in color.

I decided to load this beer up on noble hops, using the hop schedule from Ello Poppet as a template. It does use more hops than Ello Poppet. I might be hoppier than the style calls for.

I didn't brew last weekend. Making a starter today. I'll prep the water and start an overnight mash tonight. Brew day tomorrow.

Brew day went well today. From the time I started until the fermenter was in its basement spot was exactly 2.5 hours. I hit the expected OG. I am trying sous vede magnets holding hop bags for the dry hop. The yeast started up almost immediately and I think it likely that the kraussen is going to hit the hop bags ... oh well.

Tilt says 1.023 at 70 degrees. Kraussen starting to fall. It did get at least one of the hop bags. Maybe both. Regardless, I'll wait a couple days to release them.

Tilt says 1.002 at 67 degrees. Beer starting to clear, but there is still some kraussen on the top. Think I'll wait one more day before letting the dry hop fall into the beer.

Tilt says 1.003 at 67 degrees. Still a real thin layer of kraussen, but I dropped the hops. The one with the magnet in it sunk immediately. The other is sitting on top right now. There is a huge layer of yeast on the bottom.

Tilt said 1.001 at 67 degrees. Taking it out to put in Captain Serious. I was wrong about the magnet hop bag sinking to the bottom. It is actually fairly close to the top. Still some kraussen on top.

Kegged. 1.003 FG makes this a 6.1% abv beer. Nice Nobel hop flavor and aroma on a dry crisp base. Great French Saison yeast flavor. Drink. Drank. Drunk.

Brought a gallon to Big Brew Day Saturday. It was well loved. The beer is now pouring foamy. I think it will recover soon. Delicious nonetheless.

Shared with the in-laws. My father-in-law REALLY said this was his favorite of what is on tap. I think that's a good choice. This is an awesome beer for sure.

Spring has sprung. Time to plan a brew day for the Spring Saison.

Brew day went well. Overnight mash. Started brew day at 5:30 ish. Pitched by 8:00. Basically cleaned up at 8:15. OG right on plan, although I had to dilute .5 gallon and boil about 5minutes less to get there.

Fermentation took off early afternoon yesterday. Today, Tilt says 1.032 at 69 degrees. I actually took the time to calibrate the Tilt on the measured OG, so that's like 17 points already. Nice hop aroma in coming out of the air lock.

Tilt says 1.021 at 69 degrees. Still fairly active but certainly slowing down. Still has a long way to go. Took a tiny little sample. Lots of yeast still in suspension, but getting really nice lemony flavors. Can't wait to drink this beer.

Tilt now says 1.008 at 70 degrees. Still bubbling some, but considerably slower. Planning on kegging in about a week. I do have an open keg, so if the Tilt gravity stops falling, there is no reason not to get it into that keg. I do expect another .004 points, so it will be at least of few more days.

Tilt says 1.007 at 68 degrees. Still a bit of bubbling, but even slower than yesterday. I put in the dry hops. Still a thin layer of krausen on the top of the beer. Hoping to see the FG reach 1.004. We'll see.

Tilt says 1.006 at 66. Bubbling seems done and the gravity has not fallen in a couple day. I think we're ready to keg.

Tilts says 1.005 at 68 degrees. If this is accurate, the beer is now at 5.8% ABV. The tilt has been jumping back and forth between 1.005 and 1.006 for almost a week now. Time to keg. Still need to clean a keg, but may get it kegged tonight.

Kegged. Measured 1.003 FG. Makes this a 6.1% beer. Nice. Flavor great, although I'm not sure I got much from the dry hops. Chilling in the keg right now.

Yesterday I made a starter. I did an overnight mash starting early this morning. Today, up at 6am to drain wort and start heating to boil.

Brew day went pretty well. Started heating up to boil at 69%, so I didn't save much time by doing overnight mash. Cleanup done at 10am. OG right at plan.

Kegged. Added the last of the dry hops (a little more than 1 oz). Love the flavor. Finished very dry at 1.003. It actually might be a bit lower to be honest. Love the French saison flavor. Nice hop flavor as well. Chilling in the kegerator. Have not applied gas yet.

Gravity is significantly lower today at 1.006, and it does taste much drier. Ideally it will drop another couple of points, although this is about 90% ADF. We shall see what happens. I'll be happy either way. Still some yeast in suspension. Current ABV is 6.8%

Mash was underway at 3am and then I went back to bed. Picked up sparge before 7. Boil started a little after 7:15. Pre-boil gravity 1.05. Dilluted.

The rest of the brew day went well. Lots of hops and quite a bit of trub ended up in fermentor. OG was a bit high at 1.064. Pitched at about 64. This morning it is going at 66.

Took a gravity reading and taste sample. Gravity is 1.005, which puts the ABV on the beer at 7.8% ABV. Sample is fantastic. Nice Noble Hops and spicy yeast character. Doesn't taste boozy at all. Wonderful beer. Dangerous beer.

Kegged today. I'm going to call the FG 1.004, which apparently doesn't change the ABV. Sample is delicious. A bit of tartness and lemony citrus, but mostly just exactly what I want in a Saison. Perhaps a bit high in ABV, but I can live with it.
