Batch Notes

Substituted Briess Pilsen Light LME for Light DME because I had a bunch that needed to be used up.

Date Note
10/23/2009 Fri Mixed up beer ahead of schedule.  Poured in more LME than intended should kick up the alcohol a bit, but not much.  Smelled great going into the fermentor.  Tried putting ice in the wort to help cool down.  Not sure that is a great idea.  If I get an infection, that is probably to blame.  Placed the keg in the conditioning cooler to start off with.
10/29/2009 Thur Got an update on the Mr. Beer ingredients.  This recipe went from .54 BU/GU to .70, making it very hoppy.  Have to see how it tastes.
10/31/2009 Sun Moved Rutt from the conditioning cooler (about 62 degrees) to the spare bedroom.  It has not gotten over 66 yet, but I am sure it will get up to 70 soon.
11/08/2009 Sun The assistant brewers and I bottled in 14 12 oz and 3 liter bottles.  They didn't get a sample, but I did.  Perfectly good flat beer.  The hoppiness seemed just about right.  Very excited about drinking this beer around mid - December.
11/23/2009 Mon The carbing phase is over, but I'm going to wait to put it in the cooler until after BH Black has gotten past the crazy part of fermentation.  Put one bottle into the beer fridge and will most likely taste on Thanksgiving.
11/27/2009 Thur Wow.  Great tasting beer with practically no conditioning time.  Will only get better.  Seemed to be just the right amount of bitterness / hoppiness for the malt in this brew.  Might consider just a bit more cinnamon next time.
12/06/2009 Sun Finally got all these into the conditioning cooler.
12/13/2009 Sun Moved 2 into beer fridge.  Was going to move 3, but dropped one which popped the top, so I had to drink one while watching football.  Great beer.  I love the hoppy bitterness.  Next time might double the cinnamon just to see what it does.
12/20/2009 Sun Really really really good.
12/30/2009 Wed Most of these are still in the conditioning cooler, but will start to take these out to seriously drink them soon.
01/02/2010 Sat Had one while brewing Tweedle Beetle Stout.  SOOOOOOO good.  Might replace Eric's Red on the favorites list behind P&T.
01/09/2010 Sat A liter with dinner.  Best beer I've had in awhile.
01/18/2010 Sun Had one while putting up garage door opener / watching football.  Yummy stuff.
02/16/2010 Tues Allowed myself a treat while updating the web site with the Dragon Spit II recipe.  No real sign of the hops fading in this one.
02/26/2010 Fri Had a liter tonight.  Still love the beer.  The cinnamon really gives this beer an interesting taste I think.  At least I think that is the cinnamon.

Dragon Drool

Recipe Dragon Drool Style American Amber Ale
Brewer Sheppy Brew Batch 2.13 gal

Recipe Characteristics

Recipe Gravity 1.062 OG Estimated FG 1.016 FG
Recipe Bitterness 13 IBU Alcohol by Volume 6.0%
Recipe Color 13° SRM Alcohol by Weight 4.7%

Quantity Grain Type Use
0.25 lb Brown Sugar, Dark Sugar Other
0.50 lb Dark DME Extract Extract
1.21 lb MrB. Englishman's Nut-Brown Ale Extract Extract
1.21 lb MrB. Mellow Amber UME Extract Extract
Quantity Hop Type Time
1.00 oz MrB. Englishman's Nut-Brown Ale Pellet 5 Min
Quantity Misc Notes
0.50 unit Cinnamon Spice 1/2 tsp.

Recipe Notes

Boil brown sugar, DME, and cinnamon for 5 minutes.

Date Note
04/12/2009 Sun Mixed brew.  Boiled DME, brown sugar, and cinnamon for 5 minutes before adding the HME and UME.  Fermenting in Tuke.
04/24/2009 Fri Sampled.  Seems to be coming along well.  Cannot really taste the Cinnamon.  I have decided to warm condition for at least a couple weeks before adding to fridge.  But, that is sort of getting ahead of myself since it needs to ferment for 2 more weeks.
05/09/2009 Sat Sampled and bottled in 4 PETs and 12 12oz glass bottles.  Tasted very good going into the bottle.  Batch primed with 55g of cane sugar.
05/25/2009 Mon Put the bottles in my conditioning cooler.  My plan is to keep the beer in here until 6/25, but we will see how patient I am.  Tyler asked me when I will be trying this beer.  Not sure having a 7 - year -old ask about my brewing schedule says something positive about my parenting ability.  Hmm... well, he did do the artwork for this one, so that is probably why he is interested in it.
06/06/2009 Sat Put 2 12 oz bottles in fridge so that I can see how the conditioning is coming along.  Not sure when I will taste.
06/11/2009 Thur Had 2 while watching game 4 of the NBA finals.  Tastes real good.  Carbonation is not high as it should be.  Not sure why since I did not notice this with the Northern Amber which was primed exactly the same.  Think maybe this with 1/4 U.S. Goldings hops (sort of a combo of this with Northern Amber) will be one of my "go-to" brews.
06/15/2009 Mon Put a few more bottles into the fridge in anticipation of a possible beer tasting this weekend.
06/26/2009 Fri Had another bottle.  Hmm. Hmmm... good.
08/21/2009 Fri Had a liter bottle with dinner.  Taste is right where it should be.
09/13/2009 Fri Shared WW, WB, P&T, Northern Amber, Eric's Red, and Dragon Spit with Jerry, Lisa, and Grammy.  The girls actually did not make it to this beer.  Jerry said he liked it, although not as much a WB, P&T, or Northern Amber.  Still planning on making this as sort of a hybrid of how I made NA and Dragon Spit.  I do like this as a dark beer.
09/27/2009 Sun Drank a few more.  The brown sugar sort of gives a maple flavor I think.  The only problem with this beer is the lack of head.  I think next time I make this I'll steep some medium or dark crystal in to add some body.
10/31/2009 Sat Finished the last liter.  Head is fine when you know how to pour, but carbonation can be up a bit (and will be on the next batch).  Am really looking forward to batch #2.
