Clan DunBroch Scottish Ale

In April of 2024, after brewing McShepardSons Irish Ale (Batch 352), I thought I'd like to do another "Roll-a-Style" beer.

My most recent list was on Roll-a-Style 1 ... 3A. Czech Pale Lager, and I rolled an:


11 corresponded with 14C. Scottish Export.

I asked ChatGPT to come up with a recipe and a name. I followed the recipe with minor tweaks.

Before this recipe, my only other Scottish Ale was Mor'du Scottish Ale, whose name was inspired by the Pixar movie "Brave". I decided to follow that theme and take another name from that movie.

Clan DunBroch is the clan of which Merida and family were members of. I thought the name "Clan DunBroch Scottish Ale" worked well.

If you don't like the name, you can name your Scottish Ale whatever you like.

The taste of Clan DunBroch is a symphony of malt-forward goodness. The foundation is laid by a robust malt backbone, offering flavors of biscuit, toffee, and roasted grain. Despite its malt prominence, it maintains a delicate balance, with just a hint of earthy hops providing a gentle bitterness to round out the profile.

Medium-bodied and smooth on the palate, this Scottish ale delivers a satisfying mouthfeel that invites contemplative sipping. Its moderate carbonation enhances drinkability without overpowering the nuanced flavors, making it a perfect companion for leisurely evenings by the fireside or gatherings with friends.

Batch sparge with 2 steps (Drain mash tun , 3.48gal) of 168.0 F water

Recipe Notes
Prepare mash and sparge water together.
Brewing salts in the mash and sparge water. This should bring Denver water profile (as defined by BeerSmith) to "Balanced Amber"
Ca=94,Mg=12,Na=21,SO4=102,Cl=106,HCO3=104
Acid addition to bring calculated pH around 5.3
Mash and boil as directed above.
Cool to around 65 degrees.
Ferment for a couple weeks.
Force carbonate to 2.5 volumes. Condition to taste.

Brew day at Du's yesterday went really well. OG right on plan. Just getting fermentation signs mid-afternoon today. Going in pressure fermentor.

Going strong. I have the spunding valve on ... but I have it set to very little pressure. Maybe 1 or 2 psi. Temp strip says 68ish. No tilt because it is in the Helles Bock fermenter right now.

Krausen gone. Beer looks real clear. Even though the spunding valve has been completely open, there is off-gassing through the beer. My calendar has me kegging this in 11 days. However, I might be kegging this beer early. It appears to be done and I have empty kegs.

Kegged. 1.010 FG, which is a little low compared to planned. 5.4% ABV is actually perfect. Nice red color going into the keg. Yummy malty beer. Can taste the EKG. A little roast.

Love love love the color. Deep red and already fairly clear. Great tan head, although it will be better with a little more carbonation. Wonderful medium body. Awesome flavor. Reminds me a lot of McShepardSons Irish Red. Maybe a bit more richness and perhaps a touch of roast. EKG hops give it just enough floral finish to let you know it's there. Pretty balanced. A little caramel sweetness, but really just enough to add to the rich complexity. Wonderful beer.

Poured a pint before the Avs game. Thick foam. Nice cascading effect. Great malt flavor. Beautiful deep red color. Love it.
